Ingredients
US Customary – Metric
For the Basic Dough
- 1.5 pounds white whole wheat flour plus extra for sprinkling
- 1.5 cups water lukewarm, plus extra if necessary
- 0.8 ounces fresh baker's yeast lievito di birra, or 1.5 cubes
- 4 tablespoons extra virgin olive oil
- 2 tablespoons salt
Toppings for Pizza Margherita
- 2 cups marinara sauce
- 4 teaspoons dried oregano
- salt to taste
- extra virgin olive oil drizzle
- 6 ounces mozzarella cheese sliced
Toppings for Red Pizza with Oregano and Parmesan
- 2 cups marinara sauce
- 4 teaspoons dried oregano
- salt to taste
- extra virgin olive oil drizzle
- 6 ounces mozzarella cheese sliced
- 1/4 cup parmesan cheese grated
Toppings for Red Pizza with Anchovies and Garlic
- 2 cups marinara sauce
- 4 teaspoons dried oregano
- 3 garlic cloves minced
- 6 anchovy fillets salted, preserved in oil
- extra virgin olive oil drizzle
- 6 ounces mozzarella cheese sliced
Toppings for Red Pizza with Tuna and Onions
- 2 cups marinara sauce
- 4 teaspoons dried oregano
- 3 garlic cloves minced
- 4 ounces tuna canned, drained
- 1 onion sliced
- extra virgin olive oil drizzle
- 6 ounces mozzarella cheese sliced
Toppings for White Pizza with Mozzarella
- fresh rosemary as much as desired
- 1 pound mozzarella diced
- extra virgin olive oil drizzle
Toppings for White Pizza with Rosemary
- fresh rosemary as much as desired

Instructions
For the Basic Dough
Make a little mountain of flour on a wooden board (or in a big bowl) then make a hole in the middle.
Mix baker's yeast with the water. Mix until completely melted. Pour it in the hole little by little.
Use your pointing finger to mix the flour with the liquid. Start from the center going outwards in a circular motion. Add extra virgin olive oil. Add more water if necessary.
Knead until you have a compact ball of dough.
Put in a big bowl bigger and cover with a cloth. Let it rise between 2 – 4 hours at room temperature. You can also leave it overnight. If you are in a hurry, put it in the oven at 95 degrees F for one hour.
When the dough has risen, divide it into 4 equal parts. It should be elastic.
To Make the Pizza
Preheat the oven at 475 degrees F.
Have the toppings prepared and ready.
Sprinkle the wooden board with flour. Work on each dough with your hands by flattening it with your hands and stretching the sides little by little. Or you can just use a rolling pin.
Oil the pizza pan. Transfer the flattened pizza dough on it. Prick it with a fork all around.
Spread some oil on the dough using your hands. Sprinkle some salt.
Put the toppings of your choice as outlined below and bake for recomended time (also found below.) Each pizza combination will vary.

1. Pizza Margherita
- Pre-heat oven and to 450 degrees F (if your oven goes higher, turn it to 475-500). If you are using a pizza stone, preheat that as well.
- Spread the tomato sauce on the pizza. Sprinkle with oregano (or fresh basil) & salt. Drizzle with extra virgin olive oil.
- Put on a baking sheet or transfer to the pizza stone in oven and bake for 9 minutes.
- Take out pizza, quickly add more tomato sauce and distribute the mozzarella on top.
- Put back the pizza in the oven and cook for another 3 minutes or until mozzarella is cooked. Some mightput the mozzarella at the beginning of the cooking or at the latter part of cooking. Putting it at the end of cooking ensures that the cheese will not burn.
- Before serving, sprinkle some oregano (or fresh basil) & drizzle with extra virgin olive oil.

2. Red Pizza with Oregano & Parmesan
- Spread tomato sauce on the pizza. Sprinkle with oregano & salt. Drizzle with extra virgin olive oil.
- Bake for 9 minutes.
- Take out pizza, quickly add more tomato sauce and distribute the mozzarella and parmesan on top.
- Put back the pizza in the oven and cook for another 3 minutes or until mozzarella is cooked. Some mightput the mozzarella at the beginning of the cooking or at the latter part of cooking. Putting it at the end of cooking ensures that the cheese will not burn.
- Before serving, sprinkle some oregano (or fresh basil) & drizzle with extra virgin olive oil.

- Before serving, sprinkle some oregano & drizzle with extra virgin olive oil.
4. Red Pizza with Tuna & Onions
- Spread tomato sauce on the pizza. Sprinkle with oregano and garlic. Place tuna & onions. Drizzle with extra virgin olive oil.
- Put in a pre-heated oven and cook at 450 degrees F for 9 minutes.
- Take out pizza, quickly distribute the mozzarella on top.
- Put back the pizza in the oven and cook for another 3 minutes or until mozzarella is cooked.
- Before serving, sprinkle some oregano & drizzle with extra virgin olive oil.
5. White Pizza with Mozzarella
- Sprinkle pizza with rosemary.
- Put in a pre-heated oven and cook at 450 degrees F for 9 minutes.
- Take out pizza, quickly distribute the mozzarella on top.
- Put back the pizza in the oven and cook for another 3 minutes or until cheese are cooked.
- Before serving, sprinkle some fresh rosemary & drizzle with extra virgin olive oil.
6. White Pizza with Rosemary
- Sprinkle pizza with rosemary.
- Bake for 12 minutes.
- Before serving, sprinkle some fresh rosemary and drizzle with extra virgin olive oil.
